Beginning with pemmican, drying food in the sun is the most ancient food preservation technique. Fair attendees are encouraged to participate and contribute by bringing thinly sliced pieces of fruit to lay out on drying tables early Saturday morning. Depending on how high the temperature gets it is very likely we will have sun dried fruit to eat by Sunday afternoon....or maybe in time for the Saturday potluck. After the initial laying out of fruit early Saturday morning this will be a mostly unattended dehydration process that will be monitored at intervals throughout the day. There will be a sign that explains what is going on, asking people not to touch but to let the sun do its thing. The table(s) will be covered with cloth to keep off insects.
